Yummy fat-free blueberry muffins - and so easy to whip up for morning tea! This muffin recipe makes about 8 medium-size muffins. Try doubling the quantities for a larger batch.
INGREDIENTS
- 1 1/4 Cups plain flour (5oz)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar (4oz)
- 1/2 cup milk (5oz)
- 1/4 cup apple sauce / pureed apple (3oz)
- 1 egg
- 3/4 cup blueberries, drained.
METHOD
- Sift dry ingredients together.
- In another bowl, mix beaten egg, milk and apple sauce.
- Add liquid ingredients to dry ingredients, and mix just long enough to moisten.
- Stir in blueberries carefully.
- Spoon into greased muffin trays. Bake for 15-20 minutes @ 180 C/350 F.
NOTE! If mix is too dry, add a little extra milk. If too moist, add a little more flour.
